Key West-Style Citrus Chicken
Garlic-spiked chicken and orange slices bring
Florida sunshine to the table
- Start to finish: 15 minutes
3 Skinless boneless chicken breast halves (about 1 pound total)
Non-stick cooking spray
1/2 Cup 100% pure Florida Orange Juice
4 Cloves garlic, minced or 1-1/2 teaspoons bottled minced garlic.
1/4 Teaspoon ground ginger
1/8 Teaspoon crushed red pepper
2 Florida Oranges, Tangerines, or Tangelos, peeled, sliced,and seeded.
Hot cooked couscous or rice (optional)
Season chicken with salt and pepper. Lightly coat a large, non-stick
skillet with cooking spray. Heat over medium heat. Add chicken; cook 8 to 10 minutes or until tender and no longer pink, turning once.
Meanwhile, in a small mixing bowl, stir together orange juice, garlic, ginger and crushed red pepper. Add juice mixture to skillet. Place orange slices on chicken. Bring to boiling; reduce heat. Simmer uncovered for 2 minutes.
To serve, spoon orange slices and pan juices over chicken. If desired, serve chicken with hot cooked couscous or rice. Makes 4 servings.
